This exceptional EVOO is 100% produced in Calabria, reflecting the unique terroir of the region. It serves as both a cooking and finishing oil, elevating your culinary creations.
Each bottle contains 16.9 fl. oz. (500ml) of liquid gold, bottled with precision. Exau's olives are harvested in October 2022 and carefully pressed to create this exquisite oil, ensuring freshness and flavor.
EXAU showcases a delightful aroma profile, opening with notes of green olives, almond, and fresh-cut grass. Aromatic herbs and hints of tomato leaf add complexity. On the palate, it offers a well-balanced bitterness with a satisfying chicory and bitter almond sensation. The finish lingers with a persistent note of bitter almond.

Exau's olive oil is crafted from the local Calabrian cultivar Carolea and the Pugliese cultivar Coratina. These trees, ranging from 100 to 3 years old, have been planted by three generations of farmers. Located just 25 meters above sea level, near a stunning cliff overlooking the Ionian Sea, they bask in the abundant sunshine and enjoy refreshing sea breezes, creating a truly exceptional oil.

Located 25 meters above sea level and just several hundred meters from a cliff that faces the Ionian sea, these trees benefit from soaking in the sun from dusk till dawn and refreshing themselves with a magical summer iodine breeze on windy days.
