Braised Beef Short Rib Ragu with Spinach & Ricotta Stuffed Shells

Tender braised beef short rib ragu with spinach and ricotta–stuffed shells, nestled together in a rich, savory sauce.

We asked our friend and Master Sommelier, Laura Williamson, for the perfect wine pairing for this week’s featured pasta. Her choice: Alpha Estate “Axia” Red from Northern Greece.

Why? The plump Syrah in the blend melts seamlessly into the rich, robust short rib ragu, while Xinomavro brings brightness and lift to balance the decadence of the spinach and ricotta–stuffed shells. Together, the wine and pasta create a pairing that is both rich and beautifully balanced.

Each bake feeds 2-4 people.
