Established in 1862, Acetaia Pedroni is one of the oldest artisan balsamic vinegar producers in the world. Six generations later, their Tradizionale Balsamic Vinegar has won best Balsamic Vinegar in Modena. Acclaimed critic Ruth Reichl proclaimed that she had found "the perfect balsamic vinegar" with Pedroni.
Their Italo vinegar is from the Pedroni family's aged Tradizionale D.O.P offerings, which must undergo a stringent inspection and bottling process by the Consortium of Balsamic Vinegar of Modena. Italo is aged for a minimum of 12 years in oak and chestnut wood barrels. A fragrant vinegar owing to the exceptional grapes and special casks; flawless with risotto, omelets and strawberries.
