The Big Lasagna Take-n-Bake

Our friend and Master Sommelier, Laura Williamson, helped us again by selecting a wine to meld with this week’s featured take-n-bake. Her favorite to harmonize with our “Big Lasagna” — Elio Perrone “Tasmorcan” Barbera d’Asti from Piedmont, Italy.  Tasmorcan means badger in Piedmontese dialect.

This extraordinary red wine from 100% Barbera grape hails from two single vineyard plots of old vines aged 40-70 yrs.  Old vines yield more power and depth so look for rich black cherry and plum to support the decadence of the lasagna while the zesty finish tangoes with our housemate tomato sauce, lingering through long, earthy flavors that effortlessly resonate with spinach and ricotta.  

Each Take-n-Bake feeds 2-3 people.
