José Gourmet produces this pâté entirely in-house at 100 Mistérios, their micro-cannery and the smallest in Portugal. Here, octopus is simmered until tender, then blended with extra virgin olive oil, tomato, onion, garlic, and warm spices. The recipe echoes traditional Portuguese caldeiradas but is transformed into a polished, spreadable preparation that highlights clarity of flavor and refined texture.
