2 bundles Zelli Spaghetti (fresh or dried)
4 Tbsp butter
2 Tbsp grated fresh garlic
2 tsps fresh cracked pepper
¼ c. Grated Parmesan, plus extra for serving
2 Tbsp chopped fresh parsley
Salt
In a large pot of well-salted boiling water, cook pasta to package instructions until just nearly done.
Meanwhile, over medium heat, melt butter and gently cook garlic and black pepper in butter, careful not to burn the garlic. You’re really just looking to infuse the butter with the garlic and let it simmer while your noodles cook.
Once pasta is nearly done, transfer it straight from the pot into the garlic butter.
Add about another ladle full of pasta water and toss vigorously with tongs to coat pasta.
Remove from heat and add cheese, continuing to toss and stir until creamy sauce forms. Add additional pasta water to loosen sauce as needed.
Toss in parsley and taste for seasoning. You may not need much salt if you seasoned your pasta water well, as the Parmesan is also salty.
Plate, grate some additional parm over the top and serve!
